Lamb chops are another of the most special dishes of Palencia cuisine.
They can be made fried or grilled. If you choose the first of these options, you need to heat a small amount of olive oil and fry a garlic previously cut into very thin sheets until it begins to take color. After removing the garlic, that same oil is used as a base to fry the chops, about two minutes on each side until they are well browned. Both grilled and in a pan, you can add a mash of garlic and fresh parsley.
